Zuppa di Cozze Recipe

A simple saute of mussels.
Ingredients:

  • 3 Tbs. Olive Oil
  • 1 Medium Onion, Chopped
  • 2 Stalks of Celery, Chopped
  • 3-4 Cloves of Garlic, Minced
  • Salt & Pepper to Taste
  • 1/2 Cup Dry White Wine
  • 1 Cup Water
  • 1 (14 oz.) Can Chopped Tomatoes
  • 3 Pounds Mussels, Scrubbed with Beards Removed
  • 1/4 Cup Chopped Fresh Parsley

Procedure:

  1. Heat the oil in a large saucepan and saute the onion, celery and garlic until translucent.
  2. Add the tomatoes, salt and pepper and cook 5-10 minutes or until the sauce begins to thicken.
  3. Add the wine and cook an additional 10 minutes, adding as much water as needed if the sauce bevomes too thick.
  4. Add the cleaned, drained mussels, cover, and cook until the shells open, which should be about 5 additional minutes.
  5. Add the parsley just before serving.
  6. You can serve this dish on grilled garlic bread, spooning the juices over the bread in a shallow bowl, or serve with a good crusty bread on the side.

A little spicy salami adds a little kick to steamed clams.
Ingredients:

  • 3 Pounds Small Clams (Littleneck Work well)
  • 1 Small Onion, Chopped
  • 3 Cloves Garlic, Minced
  • 3 Tablespoons Olive Oil
  • 1/2 Cup Clam Juice Or Fish Stock
  • 3/4 Cup Dry White Wine
  • 1/2 Cup Strained Tomatoes
  • 3 Ounces Chopped Dry Spicy Italian Sausage (See Notes Above)
  • 1/3 Cup Chopped Fresh Parsley
  • 1 Tablespoon Unsalted Butter
  • Salt & Cracked Black Pepper

Procedure:

  1. Heat the oil in a large, heavy skillet.
  2. Add the onion and cook until soft and translucent, then add the garlic, chopped sausage and cook for another couple of minutes.
  3. Add the clam juice, wine, and tomato sauce and cook until reduced to about 2 cups.
  4. Season with salt and pepper.
  5. Add the clams, cover and cook for about 5 minutes or until the clams have opened.
  6. Discard any clams that do not open.
  7. Add the fresh parsley and shake the pot to combine.
  8. Ladle the clams and juice equally into individual bowls and serve hot.

A mix of shrimp, scallops, calamari, and octopus tossed together in a zesty dressing. A great option for Christmas Eve.
Ingredients:

  • 3 Cups White Wine
  • 3 Bay Leaves
  • 2 Cloves Garlic, Crushed
  • 2 Lemons
  • 1 Pound Calamari, Cleaned And Cut Into Rings
  • 1 Pound Medium Shrimp, Cleaned And Deveined
  • 1 Pound Scallops
  • 3 Cups Cooked Octopus Cut Into 2 Inch Pieces
  • 1 Cup Black Olives (Optional)
  • 1 1/2 Cups Chopped Celery

Dressing:

  • 1 Cup Extra Virgin Olive Oil
  • 1/2 Cup Lemon Juice
  • 3 Large Garlic Cloves, Thinly Sliced
  • 1/4 Cup Chopped Parsley
  • Dash Red Pepper Flakes
  • Salt & Pepper To Taste

Procedure:

  1. In a stockpot, combine 3 quarts of water, the wine, bay leaves, and crushed garlic.
  2. Slice the lemons in half and squeeze the juice into the mixture.
  3. Drop the lemons into the pot, then bring the mixture first to a boil, then reduce the heat to medium low.
  4. First cook the shrimp, cook 2 minutes and remove from the pot.
  5. Cook the calamari 1 1/2 minutes and remove from the pot as well.
  6. If you are cooking scallops, cook in the same manner for 2 minutes.
  7. Mix the seafood together and set aside.
  8. If you are cooking octopus, add it to the pot, and cook it for about 45 minutes to an hour or until it is tender.
  9. Remove it from the pot and let it cool.
  10. Remove the skin and suckers, and cut it into bite sized pieces.
  11. Mix the octopus with the other ingredients.
  12. Place the seafood in a bowl and add the chopped celery.
  13. Add the dressing ingredients and mix well.
  14. Cover and let marinade a minimum of 12 hours in the refrigerator.
  15. Just before serving, adjust the seasonings, and add the black olives if you are using them.
  16. Serve at room temperature.

A spicy steamed mussel dish flavored with sopressata and sun-dried tomatoes.
Ingredients:

  • 2 Tablespoons Olive Oil
  • 1 Teaspoon Butter
  • 4 Ounces Sopressata Sausage, Finely Chopped
  • 1/3 Cup Finely Chopped Oil Packed Sun-Dried Tomatoes
  • 4 Cloves of Garlic, Peeled & Minced
  • 1 Teaspoon Red Pepper Flakes
  • 1 Cup Dry White Wine
  • 2 Pounds Fresh Mussels Scrubbed
  • 1/3 Cup Chopped Fresh Parsley

Procedure:

  1. Heat the oil and butter in a large bottomed saucepan.
  2. Once hot, add the sopressata, tomatoes, pepper flakes, and garlic and cook for about 5 minutes over medium heat.
  3. Add the white wine and bring to a boil.
  4. Add the mussels, cover with a lid, and cook over high heat for 5 minutes.
  5. Shake the pan and cook another 5 minutes or until all the mussels have opened.
  6. Add the parsley and scoop the mussels and broth into individual bowls.

 


Seared Scallops with Lemon Orzo Recipe

Seared Scallops with Lemon Orzo Recipe

Servings: 4 (serving size: 4 1/2 ounces scallops and about 3/4 cup pasta mixture)

Ingredients:

  • Cooking spray
  • 1/2 cup prechopped onion
  • 1 cup uncooked orzo (rice-shaped pasta)
  • 1 cup fat-free, less-sodium chicken broth
  • 1/2 cup dry white wine
  • 1/4 teaspoon dried thyme
  • 2 tablespoons chopped fresh chives
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons olive oil
  • 1 1/2 pounds sea scallops
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Procedure:

  1. Heat a medium saucepan over medium-high heat.
  2. Coat pan with cooking spray. Add onion to pan; sauté 3 minutes.
  3. Stir in pasta, broth, wine, and thyme; bring to a boil.
  4. Cover, reduce heat, and simmer 15 minutes or until liquid is absorbed and pasta is al dente.
  5. Stir in chopped chives and lemon juice. Keep warm.
  6. Heat oil in a large cast-iron skillet over medium-high heat.
  7. Sprinkle scallops evenly with salt and pepper.
  8. Add scallops to pan; cook 3 minutes on each side or until desired degree of doneness. Serve with pasta mixture.
