Rich ‘n’ Thick Hot Chocolate

Servings:About 4 cups

Ingredients:

  • 2 teaspoons cornstarch
  • 4 cups milk, divided
  • 2 (3.5-oz.) dark chocolate bars (at least 70% cacao), chopped $
  • 1/3 cup honey
  • 1 teaspoon vanilla extract
  • Pinch of salt

Procedure:

  1. Whisk together cornstarch and 1/2 cup milk until smooth.
  2. Cook remaining 3 1/2 cups milk in a large, non aluminium saucepan over medium heat until bubbles appear around edge of saucepan (about 4 minutes; do not boil). Whisk in chocolate, honey, vanilla extract, and salt until blended and smooth. Whisk in cornstarch mixture.
  3. Bring milk mixture to a light boil, whisking frequently (about 4 minutes). Remove from heat. Let cool slightly. (Mixture will thicken as it cools.) Serve immediately with Marshmallow Whipped Cream, if desired.
  4. Note: For testing purposes only, we used Ghirardelli Intense Dark Twilight Delight 72% Cacao dark chocolate bar.
  5. Mexican Rich ‘n’ Thick Hot Chocolate: Prepare recipe as directed through Step 2, whisking in 1 1/4 tsp. ground cinnamon and 1 tsp. ancho chili powder with chocolate. Proceed with recipe as directed.
  6. Orange-Almond Rich ‘n’ Thick Hot Chocolate: Prepare recipe as directed through Step 2, whisking in 3 Tbsp. orange juice and 2 Tbsp. almond liqueur with chocolate. Proceed with recipe as directed.

Peanut Butter with Banana and Flax Smoothies Recipe

Peanut Butter, Banana, and Flax Smoothies

Servings: 2 (serving size: about 3/4 cup)

Ingredients:

  • 1/2 cup 1% low-fat milk
  • 1/2 cup vanilla fat-free yogurt
  • 2 tablespoons ground golden flaxseed
  • 1 tablespoon creamy peanut butter
  • 1 teaspoon honey
  • 1/4 teaspoon vanilla extract
  • 1 ripe banana, sliced

Procedure:

  1. Place all ingredients in a blender; process until smooth.
  2. Serve.

Smoothie Pops Recipe

Smoothie Pops

Servings: 3

Ingredients:

  • 1/2 cup nonfat vanilla yogurt
  • 1/2 cup skim milk
  • 1 cup frozen berries
  • 3 5-oz. paper cups
  • 3 ice-pop sticks

Procedure:

  1. Blend yogurt, skim milk and frozen berries until smooth.
  2. Pour into paper cups with ice-pop sticks.
  3. Freeze until solid.

Bananas and Peanut Butter Shake Recipe

Bananas and Peanut Butter Shake

Servings: 2

Ingredients:

  • 1/2 cup smooth peanut butter
  • 3/4 cup milk
  • 2 cups vanilla ice cream, slightly softened
  • 1 banana, sliced

Procedure:

  1. In a bowl, beat peanut butter and 1/4 cup milk until smooth. In a blender, blend ice cream, remaining milk and banana (reserving 2 slices) until smooth.
  2. Beat in peanut butter mixture until just combined.
  3. Pour into 2 glasses and garnish each with banana slice.
  4. Serve.

Vanilla Honey and Nut Smoothie Recipe

Vanilla Honey and Nut Smoothie

Servings: 3 (serving size: 1 cup)

Ingredients:

  • 2 cups vanilla low-fat frozen yogurt
  • 1/2 cup vanilla soy milk
  • 1/2 cup fat-free milk
  • 1/3 cup cubed soft silken tofu
  • 1 tablespoon creamy peanut butter
  • 1 tablespoon honey
  • 1 tablespoon ground flaxseed (optional)

Procedure:

  1. Combine the first 6 ingredients in a blender; process until smooth.
  2. Sprinkle with flaxseed, if desired.
  3. Serve.
