Satay Recipe

Ingredients:

  • 1/2 cup soy sauce
  • 1 large onion, chopped
  • 1 stalk lemongrass, minced
  • 1 tablespoon peanut oil
  • 1/2 teaspoon turmeric
  • 2 cloves garlic, minced
  • 1 1/2 teaspoons brown sugar
  • 1 fresh ginger, peeled and sliced
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 kilo chicken or beef, sliced into 2-inch portions
  • Bamboo skewers

For peanut sauce

  • 1/2 cup salted roasted peanuts
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 1 stalk lemongrass
  • Vegetable oil
  • 1 cup coconut milk
  • 1/2 cup peanut butter
  • 1 teaspoon brown sugar
  • 2 teaspoon dried tamarind, soaked
  • 1 teaspoon salt

Procedure:

For satay

  1. Make the marinade by mixing soy sauce, onion, lemongrass, peanut oil, turmeric, garlic, brown sugar, ginger, cumin, salt and pepper in one large bowl.
  2. Coat sliced meat with marinade. Keep marinated meat inside the refrigerator overnight.
  3. To keep bamboo skewers from burning while barbecuing, soak them in water an hour before inserting them into the meat,
  4. Thread 4 to 5 pieces of marinated meat through the soaked skewers.
  5. Cook over hot coals with a barbecue grill. Turn meat frequently and brush with the leftover marinade until the meat is cooked.

For peanut sauce

  1. Put peanuts, onions, garlic, and lemongrass in a blender and grind to your preferred consistency.
  1. Saute the mixture in vegetable oil for 5 minutes while stirring frequently, and then mix in the coconut milk.
  2. Bring to a boil.
  3. Add the peanut butter, brown sugar, dried tamarind and salt.
  1. Let it simmer for 2 minutes, and then serve with slices of cucumber and onion.

Chicken Satay Recipe

Making Chicken Satay using this recipe is like preparing barbecue. The meat needs to be marinated at least overnight so that it will absorb the flavor. It is then skewered in bamboo sticks (which we also call barbecue sticks) before grilling. It is recommended that you baste the chicken with left over marinade while grilling so that the meat will not be dry.

Ingredients:

  • 1 1/2 lbs boneless chicken breast, sliced into strips
  • 4 tablespoons lemongrass, minced
  • 1 teaspoon powdered ginger
  • 2 teaspoons turmeric powder (or ground turmeric)
  • 1 teaspoon cracked red pepper
  • 3 tablespoons fish sauce
  • 2 tablespoons peanut butter
  • 1/4 cup soy sauce
  • 3 tablespoons brown sugar
  • 1 1/2 tablespoon curry powder
  • 2 teaspoons minced garlic
  • 10 to 15 pieces bamboo skewers

Procedure:

  1. In a large bowl, combine soy sauce, fish sauce, ginger powder, turmeric, cracked red pepper, lemongrass,peanut butter, sugar, curry powder, and garlic. Stir and set aside.
  2. Put the chicken in bowl with the mixture and marinate overnight.
  3. Soak the skewers in water for 10 to 15 minutes.
  4. Skewer the marinated chicken strips.
  5. Grill each side for 6 to 7 minutes. Note: use the leftover marinade as the basting sauce.
  6. Transfer to a serving plate. Serve with Peanut Sauce.
  7. Share and enjoy

Peanut Sauce Recipe

Ingredients

  • 1/2 cup roasted peanuts, pounded
  • 2 tablespoons peanut butter
  • 4 tablespoons coconut milk
  • 2 teaspoons minced garlic
  • 1 teaspoon soy sauce
  • 2 teaspoons sesame oil
  • 1 1/2 tablespoons brown sugar
  • 2 tablespoons fish sauce
  • 1 teaspoon lemon juice
  • 1/2 teaspoon chili powder
  • 5 tablespoons water

Procedure:

  1. Combine all the ingredients in a saucepan. Stir.
  2. Turn-on heat and let the mixture boil.
  3. Lower the heat and simmer until the sauce thickens.
  4. Turn the heat off and transfer the sauce to a bowl.
  5. Serve with Chicken Satay.
