Sauteed Mussels In Tomato Saffron Sauce

When preparing very fresh seafood, often the simplest recipes are best!
Ingredients:

  • 3 Tbs. Olive Oil
  • 1 Medium Onion, Chopped
  • 3-4 Cloves of Garlic, Minced
  • Salt & Pepper to Taste
  • 1/2 Teaspoon Saffron Threads
  • 1/2 Cup Dry White Wine
  • 1 (28 oz.) Can Chopped Tomatoes
  • 3 Pounds Mussels, Scrubbed with Beards Removed
  • 1/4 Cup Chopped Fresh Parsley

Procedure:

  1. Heat the oil in a large saucepan and saute the onion and garlic until translucent.
  2. Add the tomatoes, salt and pepper and cook 5-10 minutes or until the sauce begins to thicken.
  3. Add the wine and saffron, and cook an additional 10 minutes for the flavors to meld.
  4. Add the cleaned, drained mussels, cover, and cook until the shells open, which should be about 5 additional minutes.
  5. Add the parsley just before serving.

Serve this dish with lots of crusty bread to sop up the garlic butter sauce.
Ingredients:

  • 2 Pounds Fresh, Cleaned Mussels
  • 3-4 Cloves Garlic, Minced
  • 1 Cup Fresh Parsley, Chopped
  • 3/4 Stick (6 Tablespoons) Unsalted Butter At Room Temperature
  • Salt & Pepper

To Serve:

  • Crusty Italian Bread, Grilled

Procedure:

  1. Combine the butter, garlic, parsley and seasonings in a small bowl, and mix together well.
  2. Preheat your oven to 450 degrees F.
  3. Place the mussels in a large baking dish, and spoon the butter/garlic mixture on top.
  4. Cover the dish tightly with foil, and bake for about 15 minutes, or until the mussels open.
  5. Discard any that do not open.
  6. Serve in large bowls, dividing the sauce equally between each serving.
  7. Offer crusty bread to sop up the delicious juices.

A simple saute of mussels.
Ingredients:

  • 3 Tbs. Olive Oil
  • 1 Medium Onion, Chopped
  • 2 Stalks of Celery, Chopped
  • 3-4 Cloves of Garlic, Minced
  • Salt & Pepper to Taste
  • 1/2 Cup Dry White Wine
  • 1 Cup Water
  • 1 (14 oz.) Can Chopped Tomatoes
  • 3 Pounds Mussels, Scrubbed with Beards Removed
  • 1/4 Cup Chopped Fresh Parsley

Procedure:

  1. Heat the oil in a large saucepan and saute the onion, celery and garlic until translucent.
  2. Add the tomatoes, salt and pepper and cook 5-10 minutes or until the sauce begins to thicken.
  3. Add the wine and cook an additional 10 minutes, adding as much water as needed if the sauce bevomes too thick.
  4. Add the cleaned, drained mussels, cover, and cook until the shells open, which should be about 5 additional minutes.
  5. Add the parsley just before serving.
  6. You can serve this dish on grilled garlic bread, spooning the juices over the bread in a shallow bowl, or serve with a good crusty bread on the side.

A simple yet delicious way to serve fresh mussels.
Ingredients:

  • 2 Pounds Fresh Mussels
  • 1 Tablespoon Olive OIl
  • 3 Cloves Garlic, Peeled & Minced
  • 1 Medium Onion, Peeled, & Diced
  • 3/4 Cup Good Quality Beer
  • 3 Tablespoons Butter
  • 4 Tablespoons Fresh Chopped Parsley
  • 1 Teaspoon Dried Thyme
  • 1 1/2 Teaspoons Dijon Mustard
  • Salt & Pepper

Procedure:

  1. Rinse the mussels under cold water, and remove the beards if necessary.
  2. In a large heavy pot with a lid, heat the olive oil, then add the onion, garlic, and salt and pepper and cook over medium low heat until softened, about 5 minutes.
  3. Pour in the beer and continue to cook, increasing heat to medium high.
  4. Add the mussels and cover the pot, and steam the mussels until they open, shaking the pot from time to time for 5 to 10 minutes.
  5. Remove the mussels from the broth to a heated bowl, and add the thyme, butter, and mustard.
  6. Stir well, and cook over high heat, seasoning with additional salt and pepper if needed.
  7. Stir in the fresh parsley and pour the juices over the mussels in the bowl and serve immediately.

A spicy steamed mussel dish flavored with sopressata and sun-dried tomatoes.
Ingredients:

  • 2 Tablespoons Olive Oil
  • 1 Teaspoon Butter
  • 4 Ounces Sopressata Sausage, Finely Chopped
  • 1/3 Cup Finely Chopped Oil Packed Sun-Dried Tomatoes
  • 4 Cloves of Garlic, Peeled & Minced
  • 1 Teaspoon Red Pepper Flakes
  • 1 Cup Dry White Wine
  • 2 Pounds Fresh Mussels Scrubbed
  • 1/3 Cup Chopped Fresh Parsley

Procedure:

  1. Heat the oil and butter in a large bottomed saucepan.
  2. Once hot, add the sopressata, tomatoes, pepper flakes, and garlic and cook for about 5 minutes over medium heat.
  3. Add the white wine and bring to a boil.
  4. Add the mussels, cover with a lid, and cook over high heat for 5 minutes.
  5. Shake the pan and cook another 5 minutes or until all the mussels have opened.
  6. Add the parsley and scoop the mussels and broth into individual bowls.
