Baked Parmesan Garlic Chicken Wings Recipe

Ingredients:

  • 1 teaspoon dried oregano
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon ground cumin
  • 1 teaspoon kosher or sea salt (1/2 tsp table salt)
  • 2 1/2 pounds chicken wings
  • 2 tablespoons extra-virgin olive oil (or melted butter)
  • 2 tablespoons minced fresh basil
  • 2 garlic cloves, finely minced
  • 1/4 cup grated parmesan cheese
  • 1/2 teaspoon seasoning salt (like Lawry’s)
  • 1 cup blue cheese dressing
  • 1-2 teaspoons Dijon mustard (or to taste)

Procedure:

  1. Preheat oven to 425F. In a small bowl, mix together the oregano, rosemary, cumin and salt. Lay the chicken wings on a baking sheet and season the chicken wings with this mixture.2. Bake the chicken wings for 20-25 minutes.
  2. While the chicken is baking, mix together the oil, fresh basil, garlic, parmesan cheese and seasoning salt.
  3. In a separate bowl, mix together the blue cheese dressing with the mustard (this is your dipping sauce)
  4. When the chicken is cooked through, toss the wings with the garlic/cheese/olive oil (or butter) sauce. Serve with the blue cheese/mustard dressing.

Oven Baked Chicken Recipe

This basic method gives you both without any special pans or weird ingredients. Just rub the chicken with oil, salt, and pepper, add a few aromatics, roast for a few minutes on high heat, then finish on low.
 

Oven Baked Chicken

Ingredients:

  • 1 whole dressed chicken
  • 3 tablespoons extra virgin olive oil
  • 1 cup chopped celery ribs
  • 1/2 cup chopped yellow onions
  • 1 piece lemon
  • 1 teaspoon ground black pepper
  • 2 teaspoons garlic powder
  • 1 1/2 teaspoons salt
  • 1 teaspoon dried thyme

Procedure:

  1. Combine juice of 1 lemon, 1 teaspoon salt, 1 teaspoon garlic powder, 1/2 teaspoon ground black pepper in a bowl. Mix well.
  2. Pour 3/4 of the mixture in the chicken’s cavity, and rub the remaining on the outer part of the chicken. Place inside the fridge and marinate overnight.
  3. Preheat oven to 400 degrees Fahrenheit.
  4. Combine olive oil, remaining salt, remaining garlic powder, remaining pepper, and thyme.
  5. Separate the skin from the meat by gently sliding your fingers between the chicken’s skin and meat starting either from the neck or the opposite side. Rub half of olive oil mixture between the skin and meat of the chicken. Rub the other half on the outer part of the chicken.
  6. Arrange the celery ribs and onions in the cavity of the chicken.
  7. Place the chicken on a roasting rack. Put inside the oven and bake for 30 minutes.
  8. Reduce the temperature to 350 degrees Fahrenheit, and continue baking for another 15 to 30 minutes or until the internal temperature of the chicken is 170 degrees Fahrenheit. Note: If the chicken skin needs more browning, you may need to put your oven to roast and cook the chicken until the skin darkens.
  9. Remove from the oven and place in a serving plate.
  10. Serve with Potato and Green Bean Salad.

Baked Chicken and Vegetable Stir Fry Recipe

Ingredients:

  • 12 ounces boneless and skinless chicken breasts
  • 1 cup Italian beans, sliced
  • 1 cup cauliflower, sliced
  • 1 cup sliced carrots
  • 1 cup yellow squash, sliced
  • 1/4 cup canned red kidney beans
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 1/2 teaspoon creole seasoning
  • 2 tablespoons cooking oil or cooking spray

Procedure:

  1. Rub the creole seasoning on the chicken breasts. Let stay for at least 30 minutes
  2. Heat a pan, pour-in 1 tablespoon cooking oil.
  3. Sear the chicken breast for 1 to 2 minutes.
  4. Preheat oven to 350 degrees Fahrenheit. Bake the seared chicken breast for 12 to 15 minutes. Note: The thicker the cut, the longer the baking time.
  5. Remove the chicken from the oven and allow to rest. Set aside.
  6. On the same pan where the chicken was seared, pour remaining cooking oil.
  7. When the oil becomes hot, put-in the carrots, Italian beans, cauliflower, red kidney beans, and yellow squash. Sprinkle with garlic powder, salt, and pepper. Stir fry (in high heat) for 5 to 8 minutes.
  8. Transfer to a serving plate. Top with the sliced baked chicken.

  • 1 1/2 lbs. chicken, cut into serving pieces

  • 2 pieces lemon

  • Water for boiling the potato
  • 2 teaspoons salt

Procedure:

  1. Boil the potatoes for 8 minutes. Remove from the pot and let cool.
  2. Slice the potatoes into quarters. Sprinkle some garlic powder and then set aside.
  3. In a bowl, combine garlic, rosemary, 1 tablespoon olive oil, juice of 2 lemons, salt, and ground black pepper. Mix well.
  4. Combine the rosemary mixture with the chicken. Make sure that the chicken is coated with the mixture equally. Marinate for 30 minutes.
  5. Heat a frying pan and then pour-in remaining olive oil.

Ingredients:

  • 2 (6 to 8 oz.) chicken breasts, skinless and boneless
  • 1 cup bread crumbs
  • 1 cup buttermilk
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

Procedures:

  1. Cut the chicken breast into 2×2 inch pieces.
  2. Place the chicken in a bowl and then pour-in the buttermilk. Cover and place in the fridge to marinate for at least 3 hours (The longer it marinates the better the texture gets).
  3. Preheat the oven to 400 degrees Fahrenheit.
  4. Sprinkle salt and pepper on the chicken.
  5. Roll the chicken over the breadcrumbs. Make sure that the chicken is properly coated.

Ingredients:

  • 4 chicken breast halves, skinned
  • 1/4 cup brown mustard
  • 1/2 cup Italian breadcrumbs
  • 1/4 cup margarine, melted
  • 2 tablespoons lemon juice
  • 2 tablespoons white wine (or water)

Procedure:

  1. Brush chicken with mustard and dredge in bread crumbs.
  2. Place in a 13- x 9- x 2-inch baking dish.
  3. Combine margarine, lemon juice, and wine (or water); drizzle 1 tablespoon over each piece of chicken and pour remainder in dish.
  4. Cover and bake at 350 degrees for 45 minutes.
  5. Remove cover, sprinkle with paprika, and bake an additional 15 minutes.
