Lechon Congee


  • 1 Cup raw rice
  • 3 Cups water
  • 2 Cups lechon, cubed and fried
  • 1 1-inch Knob ginger, sliced
  • 2 Tsp. fish sauce
  • Calamansi and scallions, for serving


  1. Combine the rice, water, ginger, and fish sauce. Cook the mixture until it thickens and the rice is completely cooked.
  2. Top the porridge with fried lechon.
  3. Serve with calamansi, scallions, and additional fish sauce.
