Honeydew Kiwi Daiquiris

Servings: 4 (serving size: about 1 1/4 cups)

Ingredients:

  • 3 cups chopped honeydew melon
  • 4 kiwifruit, peeled and coarsely chopped
  • 2 cups crushed ice
  • 1/2 cup light rum
  • 2 tablespoons sugar
  • 1 teaspoon grated lime rind
  • 2 tablespoons fresh lime juice

Procedure:

  1. Arrange melon in a single layer on a baking sheet; freeze at least 30 minutes or until firm.
  2. Combine the frozen melon and the remaining ingredients in a blender; process mixture until smooth.
