Easy Coconut Curry Recipe

INGREDIENTS:

  • 1 small onion, minced
  • 1 Tbsp minced garlic
  • 1 inch grated fresh garlic
  • 1 tsp coconut oil
  • 1 Tbsp curry powder
  • 1/2 tsp cinnamon
  • 1 tsp salt
  • 1/4 tsp cayenne pepper
  • 2 cans coconut milk
  • 1/2 cup water
  • 1 Tbsp lime zest
  • Juice of 2 limes

INSTRUCTIONS:

  1. 8 cups chopped vegetables of choice (I used carrots, broccoli cauliflower, red pepper, and snap peas)
  2. Instructions
  3. Melt 1 tsp coconut oil in a large sauce pan
  4. Add the onion, garlic, and ginger and saute until onions are translucent (2-5 minutes)
  5. Add in the curry powder and cinnamon and stir until fragrant (~1 minute)
  6. Add the remaining ingredients (except vegetables), allow to come to a boil, and then simmer for 20-30 minutes
  7. Add the vegetables to the sauce the last 10 minutes of cooking
  8. Serve as is or over rice or noodles
