Dill Flavored Fish Stew Recipe


  • 4 Fish Fillets (I used haddock)
  • 175g Potatoes chopped in cubes
  • 1 chopped onion
  • 2 celery sticks chopped
  • 1 can of chopped tomatoes
  • 3 cloves of garlic
  • 2 bay leaves
  • 250ml Vegetable stock
  • 10g chopped Fresh parsley
  • 1 tea spoon cayenne pepper
  • 10g chopped fresh dill
  • Juice of 1/2 a lemon
  • Salt to taste


  1. Heat oil in a saucepan. Add onions and celery and cook for about 5 minutes. Add tomatoes, garlic, potatoes and bay leaf, cayenne pepper and cook for 5-7 minutes. Add the vegetable stock and simmer for 10 minutes. 
  2. Add fish, 1/2 of the fresh herbs and simmer until fish is cooked. 
  3. Check seasoning. 
  4. Serve with a good squizze of the lemon and the rest of the chopped herbs.
