Clam Risoni recipe

Serves 2    Prep Time 20 minutes    Cooking Time 2 minutes

Ingredients

  • 400 grams clams
  • 3/4 cup all-purpose cream
  • 1/2 cup grated Parmesan cheese or  to taste
  • 300 grams cooked risoni
  • 2 to 3 tablespoons chopped parsley

Procedure:

  1. Blanch clams in salted water; set aside. Discard clams that remain closed.
  2. In a pan, heat together cream and Parmesan cheese.
  3. Add clams and risoni. Cook and season to taste.
  4. Turn off heat and toss in chopped parsley.
